How to Make Ayurvedic Vegan Eggnog

Holiday Drink
Ingredients
- 1 cup raw cashews
- 1 can full-fat coconut milk
- 1.5 cups plant-based milk*
- 2 teaspoons of maple syrup
- 1 tablespoons of Golden Milk Powder
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon nutmeg powder
- 1 teaspoon pure vanilla extract
- 1 pinch of Himalayan salt
*We suggest oat milk for this recipe for its sweet taste, but if you are currently experiencing an imbalance, you may want to explore our dosha-specific food guides to see which milk is best for pacifying the dosha that is out of balance.
Directions
Step 1
Boil 1.5 cups of water & soak raw cashews for at least 1 hour.
Step 2
After an hour (or more), drain the soaked cashews and rinse.
Step 3
Add all ingredients into a blender.
Step 4
Blend on high until the mixture becomes smooth and creamy.
Step 5
Taste test your nog. If you wish to have a thinner consistency, add ½ cup to 1 cup of water and blend until you have reached your desired consistency.
Step 6
If having your Ayurvedic Vegan Eggnog warm, transfer it to a saucepan and warm it on the stove. If you have a milk frother, this is another excellent way to warm before serving.
Step 7
Once to your desired temperature, pour your Ayurvedic Vegan Eggnog into individual cups or mugs and lightly dust with nutmeg &/or cinnamon. Some ideas for a festive garnish are a cinnamon or peppermint stick or a sprig of fresh rosemary.
