Ceylon cinnamon, also called "true" cinnamon is harvested from the cinnamomum vernum trees of Sri Lanka. The main chemical components of the essential oil, obtained from the leaves, are eugenol, eugenol acetate, cinnamic aldehyde and benzyl benzoate. Korintje cinnamon, also known as cassia and Indonesian cinnamon, was first cultivated in Western Sumatra. It has a mellow and smooth flavor and is sweeter than other varieties of cinnamon.
